Banana Protein Pancakes

๐ŸŒ๐—•๐—ฎ๐—ป๐—ฎ๐—ป๐—ฎ ๐—ฃ๐—ฟ๐—ผ๐˜๐—ฒ๐—ถ๐—ป ๐—ฃ๐—ฎ๐—ป๐—ฐ๐—ฎ๐—ธ๐—ฒ๐˜€ ๐Ÿฅžโฃ โฃ What IS IT with people baking banana bread in quarantine? ๐Ÿค”Geeeeez, my mom and sister make like a loaf a weekโ€”meaning Iโ€™ve been CRAVING the taste of bananas. ๐Ÿคชโฃ โฃ Since bananas are already high-carb on their own, I challenged myself to come up with a banana pancake recipe that didnโ€™t have many extra added carbs. I also eat QUITE a bit of protein throughout the day, so I didnโ€™t want to use protein powder. โฃ โฃ So I adapted @kelseyjfit โ€™s pumpkin pancakes for banana! I added psyllium huskโ€ฆ because I impulse bought it on amazon & wanted to play around with it. It has thickening properties though so if you cut that out be warned. Maybe add coconut flour if you need a sub ๐Ÿคท๐Ÿผโ€โ™€๏ธ โฃ โฃ ๐Ÿ”น๐— ๐—ฎ๐—ฐ๐—ฟ๐—ผ๐˜€ ๐—ณ๐—ผ๐—ฟ ๐˜๐—ต๐—ฒ ๐˜„๐—ต๐—ผ๐—น๐—ฒ ๐˜€๐˜๐—ฎ๐—ฐ๐—ธ: 218 cals 16.9/2.3F/31.3Cโฃ .โฃ ๐Ÿฅž๐—œ๐—ป๐—ด๐—ฟ๐—ฒ๐—ฑ๐—ถ๐—ฒ๐—ป๐˜๐˜€: โฃ โ€”1 banana (mine weighed 100g) โฃ โ€”140g egg whitesโฃ โ€”1.5 tsp @pamelasproducts not xanthin not guar โฃ(amazon) โ€”1.5 tsp baking powderโฃ โ€”5g (1 tsp) psyllium husk โฃ โ€”7g (1tbsp) nestle mini chocolate chipsโฃ โ€”cinnamonโฃ โ€”stevia/sweetener (I added 10g @skinnymixes) โฃ โฃ ๐Ÿฅž๐—œ๐—ป๐˜€๐˜๐—ฟ๐˜‚๐—ฐ๐˜๐—ถ๐—ผ๐—ป๐˜€:โฃ 1. In a measuring cup, mash the bananaโฃ 2. Add egg whites, stir to combineโฃ 3. In a separate small bowl, combine the dry ingredients โฃ 4. Add the dry ingredients to the wet. I used an immersion blender because I found that stirring by hand was not enough to eliminate clumps โฃ 5. LET THE BATTER SIT minimum 20 minutes. Anywhere from 20-60 minutes is good. This will let the batter thicken up. Donโ€™t skip this.โฃ 6. On a pre-heated pan, cook your pancakes. They will take awhile to cook on each side & you know they are ready to be flipped when they puff up & bubbles start to form. Again, be patient with it! โฃ 7. Serve with pancake syrup ๐Ÿ˜‹ I was really happy with how these turned out! 200 cals is quite easy to macro in & they smashed my banana craving ๐Ÿคฉ Tag me if you try them!
