BBQ Pulled Pork & Sweet Potato Meal Prep

BBQ Pulled Pork is the new grilled chicken if you havenโ€™t heard. ๐Ÿ’๐Ÿผโ€โ™€๏ธItโ€™s tastier & can be combined in just as many different ways! Plus you just get to toss it in a crock pot & walk away for a few hours! This has been a meal prep on repeat for me. Itโ€™s simple, but I toss in some pumpkin with the sweet potatoes for volume (pumpkin = less calorically dense) & added some cinnamon protein too. . ๐Ÿ’š๐— ๐—ฎ๐—ฐ๐—ฟ๐—ผ๐˜€: 300 cals 33.8P/3F/35.1C . ๐Ÿ–๐—œ๐—ป๐—ด๐—ฟ๐—ฒ๐—ฑ๐—ถ๐—ฒ๐—ป๐˜๐˜€: ~2lbs pulled pork tenderloin -2tsp garlic powder -2tsp onion powder -2 tsp chili powder -2 tsp paprika -2 tsp salt -2 tsp pepper -1/2 tsp cayenne pepper -2 sweet potatoes, pulled & chopped into large cubes (~460g) -280g Canned pumpkin (thatโ€™s all I had left in my can. You can use more or less!) -31g (1 serving) @pescience Snickerdoodle protein powder -cinnamon -stevia or Skinny Syrups to taste -frozen broccoli -30g GHughes Sugar Free BBQ Sauce . ๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ๐—œ๐—ป๐˜€๐˜๐—ฟ๐˜‚๐—ฐ๐˜๐—ถ๐—ผ๐—ป๐˜€: 1. Mix all the pork spices together (everything except cinnamon) 3. Cut Pork tenderloin into large chunks & place in crock pot. Add a cup of water. 4. Pour the spices on top & stir so that the pork is evenly coated 5. Cook on high 3-4 hours or until you can easily shred it 6. Place your peeled/chopped sweet potato into boiling water 7. Let boil ~20 minutes or until the potato is soft and mushy 8. Using a mixer, blend the sweet potato together with pumpkin, protein powder, more cinnamon, & sweetener to taste. This time I used brown sugar cinnamon skinny syrup! 9. Divide into containers, mixing the BBQ sauce with the pork, & then placing the frozen broccoli as is in the container (it will cook when you reheat the meal!) . ๐—ง๐—œ๐—ฃ: I create recipes individually for both the sweet potato mix & pulled pork. I measured out 39oz of RAW pork which then became 26oz cooked. I entered the recipe as having 26 โ€œservingsโ€ and then put 3oz into each container. There is quite a bit left! Same with the sweet potatoes. It weighed 755 grams after everything & so I entered 755 servings & added 180g to each container (just about 1/4)
