BBQ Pulled Pork & Sweet Potato Meal Prep

BBQ pulled pork is the new grilled chicken if you haven’t heard💁🏻‍♀️ its tastier and can be combined in just as many different ways! PLUS you just get to toss it in the crock pot and walk away for a few hours! THis has been a meal prep on repeat for me!

Ingredients

  • 2lbs pulled pork

  • 2tsp garlic powder

  • 2tsp chili powder

  • 2tsp paprika

  • 2tsp salt

  • 1/2 tsp cayenne pepper

  • 2 sweet potatoes, pulled and chopped into large cubes

  • 31g @pescience snickerdoodle protein powder

  • Cinnamon

  • Stevia or skinny syrups to taste

  • Frozen broccoli

  • 30g GHughes sugar free BBQ sauce

  • 280g canned pumpkin

Directions

  • Mix all the pork spices together (everything except the cinnamon)
  • Cut pork tenderloin into large chunks and place in the crock pot add a cup of water
  • Pour spices on top and stir so that the pork is evenly coated
  • Cook on high 3-4 hours or until you can easily shred it
  • Place your peeled/chopped sweet potato into boiling water
  • Let boil about 20 minutes r until the potato is soft and mushy
  • Using a mixer blend the sweet potato together with pumpkin, protein, more cinnamon and sweetener to taste
  • Divide into containers mixing the BBQ sauce with the pork and then placing the frozen broccoli in each container, this will cook when you reheat it
