Mashed Sweet Potato & Pumpkin

HELLO easy fall/thanksgiving inspired side dish with ALL the micronutrients.

Basically we’re blending sweet potato & pumpkin together.

If you’re skeptical of adding pumpkin to the mix… you can’t taste it!

And pumpkin is a low calorie high volume food which will allow you to eat a bigger portion of this mashed sweet potato mixture if you’re dieting on lower macros.

My favorite way to pair this is with some pulled pork tenderloin and some veggies:

You can also add a scoop of protein powder or two to this recipe if you choose. It’s not mandatory, but if you have a hard time hitting your protein goal this would be a handy way to increase it!

Ingredients

  • 2 large sweet potatoes (~480g)

  • Canned Pumpkin Puree (200g) (about half the can)

  • 1 scoop protein powder (optional) snickerdoodle or vanilla would work well

  • 1-2 tsp cinnamon

  • Stevia or sweetener to taste as needed

Directions

  • Peel the sweet potatoes & boil a pot of water
  • Boil the sweet potato for 20-30 minutes until soft
  • In a mixer combine the boiled sweet potato, canned pumpkin, cinnamon, & optional protein powder + sweetener to taste
