Loaded Baked Potato Cream of Rice

Cream of Rice has been my newest obsession!

I always thought it was some lame gluten free food… then I tried it.

I started out with this dessert cream of rice!

Then I got curious about how it would be in a savory entree & this recipe was born!

It tastes just like a loaded baked potato!

🧀𝗟𝗼𝗮𝗱𝗲𝗱 𝗕𝗮𝗸𝗲𝗱 𝗣𝗼𝘁𝗮𝘁𝗼 𝗖𝗿𝗲𝗮𝗺 𝗼𝗳 𝗥𝗶𝗰𝗲🥔⁣ ⁣ In my current adventures of NOT intermittent fasting, I needed something quick to eat at 6am before heading out the door for work. ⁣ ⁣ I wanted 20g protein minimum, some carbs to help my energy & mood, & a bit of fat to help slow digestion, but I didn’t want a giant meal, bc… 6am 😩⁣ ⁣ Enter savory cream of rice! I made this during my peak week & I’ve realized that it’s pretty much the same thing as grits! This recipe tastes like a loaded baked potato & oh boy did I look forward to eating it every morning! ⁣ ⁣ 💜𝗠𝗮𝗰𝗿𝗼𝘀: 243 cals 21.7P/3.2F/29C⁣⁣ ⁣⁣ 💜𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 𝗳𝗼𝗿 𝘁𝗵𝗲 𝗯𝗮𝘀𝗲:⁣⁣ —32g+ @thepridefoods UNFLAVORED Cream of Rice ⁣ —80-130g egg whites (I usually do 80) ⁣ —20g spinach⁣ —3 slices deli ham⁣ —15g Velveeta Cheddar Shreds ⁣ —salt, garlic, hella seasoning⁣ ⁣ 👩🏼‍🍳𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀:⁣⁣ 1. Place the COR plus seasoning & SALT in a POT & add water according to package directions. Do NOT skimp on salt guys. It’s a bland rice, it needs some flavor + garlic powder. I also used @traderjoes 21 salute seasoning⁣ 2. Cook according to package directions, stirring frequently⁣ 3. In a separate pan, sauté your deli ham to crisp it up (pretend bacon) & sauté your spinach ⁣ 4. When the COR has thickened, stir in your egg whites ⁣ 5. Let cook until thickened again, then stir in your cheese & add the sautéed ham & spinach⁣ 6. Et voila! ⁣ ⁣ This reheats well in the microwave too! ⁣ ⁣ 💁🏼‍♀️Q&A: ⁣ 1. I don’t have cream of rice, can I use grits?⁣ A: Yes, they’re pretty much the same thing IMO. ⁣ 2. Isn’t salt bad? Can I leave it out? ⁣ A: You NEED salt/sodium to balance your electrolytes for one, but you also need salt to taste anything. Thus why cookie recipes always have a pinch of salt. Don’t skip.
