baking with fat free cream cheese is my new favorite thing. It adds a ton of protein and a perfect flavor, especially to these muffins! And these came out GAINT and fluffy as heck! My recipe made 9 muffins
Blueberry Cream Cheese Protein Muffins

120g @pamcakespancakes Butter Milk protein pancake mic
20g @pescience vanilla protein powder
2g baking powder
1/2 tsp vanilla extract
1 container fat Free Cream Cheese
1 egg
46g egg whites
28g light canola butter
30-50 ml skinned syrup, or another sweetener of your choice
80g blueberries
Directions
- Set out your cream cheese/egg and let come to room temperature This is important or else your cream cheese will be to hard to mix
- Preheat oven to 350
- Cream Together the cheese, egg, egg whites, vanilla and butter
- Add your pancake mix, protein powder and baking powder and MIX
- I added my sweetener here. Since i used skinny syrup it helped with the needed liquid, if you use a powdered sweetener you will want to add a little almond milk
- Gently fold in blueberries
- Divide evenly into a parchment lined muffin tin. I got 9 out of this
- Bake for 15-20 minutes or until the edges start to turn brown
