Blueberry Cream Cheese Protein Muffins

🧁𝗕𝗹𝘂𝗲𝗯𝗲𝗿𝗿𝘆 𝗖𝗿𝗲𝗮𝗺 𝗖𝗵𝗲𝗲𝘀𝗲 𝗣𝗿𝗼𝘁𝗲𝗶𝗻 𝗠𝘂𝗳𝗳𝗶𝗻𝘀🧁 . Baking with fat free cream cheese is my new favorite thing. It adds a ton of protein & a perfect flavor, especially to these muffins! And these came out GIANT & fluffy as heck! My recipe made 9 muffins. . 𝗠𝗮𝗰𝗿𝗼𝘀 𝗳𝗼𝗿 1 muffin: 108 cals 11P/3F/9C . 💙𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀: —120g @pamcakespancakes Buttermilk Protein Pancake Mix (or a protein pancake mix of your choice) —20g @pescience Vanilla Protein Powder —2g baking powder —1/2 tsp vanilla extract —1 container (227g) Fat Free Cream Cheese —1 egg —46g egg whites —28g (2 tbsp) light canola butter (melted) —30-50mL of skinny syrup to sweeten (or another sweetener) —80g blueberries (I used frozen) . 💙𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀: 1. Set out your cream cheese/egg & let come to room temperature. This is important or else the cream cheese will be too hard to mix 2. Preheat oven to 350 3. Cream together the cream cheese, egg, egg whites, vanilla extract, & butter 4. Add your pancake mix, protein powder, & baking powder. mix. 5. I added my sweeteners here. Since I used skinny syrup, it helped add to the amount of liquid. If you don’t use a liquid sweetener you might need to use a touch of almond milk. 6. Gently fold in your blueberries. 7. Divide evenly into a parchment lined muffin tin. I got 9 out of this! 8. Bake for 15-20 minutes or until the edges start to brown on the sides. . 💙𝗠𝘆 𝗻𝗼𝘁𝗲𝘀: When baking with fat free cream cheese, I always end up with tiny chunks of cream cheese. Don’t worry if this happens, they’ll still bake just fine into the muffins.
