The clafoutis to me is the quintessential French countryside dessert/ You can add whatever fresh fruit you want and the result will be a wonderfully light dessert served warm and usually with cream (but not for our purpose) I used mini springform pans to make 4 single serving clafoutis. You can always do a normal size and cut it into 4th’s though!

2 eggs
1 cup low fat ricotta
1/2 cup non fat milk
1/2 cup stevia
1tsp Vanilla extract
1/4 cup flour
15g vanilla protein powder
Fresh Fruit of your choice 50g/70g raspberries
Powdered sugar for dusting
Directions
- Preheat oven to 425
- Prepare your mini springform pans (or one large, deep pie dish) by spraying it and lining the bottom with your fresh fruit
- Throw all ingredients into a blender (except fruit and powdered sugar) and mix
- Bake for 30 minutes or until tops have started to turn golden brown
- Let cool for 10-20 minutes and then dust with powdered sugar before serving
