Protein Clafoutis

The clafoutis to me is the quintessential French countryside dessert/ You can add whatever fresh fruit you want and the result will be a wonderfully light dessert served warm and usually with cream (but not for our purpose) I used mini springform pans to make 4 single serving clafoutis. You can always do a normal size and cut it into 4th’s though!

Ingredients

  • 2 eggs

  • 1 cup low fat ricotta

  • 1/2 cup non fat milk

  • 1/2 cup stevia

  • 1tsp Vanilla extract

  • 1/4 cup flour

  • 15g vanilla protein powder

  • Fresh Fruit of your choice 50g/70g raspberries

  • Powdered sugar for dusting

Directions

  • Preheat oven to 425
  • Prepare your mini springform pans (or one large, deep pie dish) by spraying it and lining the bottom with your fresh fruit
  • Throw all ingredients into a blender (except fruit and powdered sugar) and mix
  • Bake for 30 minutes or until tops have started to turn golden brown
  • Let cool for 10-20 minutes and then dust with powdered sugar before serving
