The temperature in Texas has been flip flopping between 70’s and 50’s so i guess I’ve been craving soup since its been more cold. My dad makes this soup at least once a year and so i recreated it to be more macro friendly with turkey sausage and minus the little elbow pasta/ You can also add whatever veggies your heart wants to this
Italian Turkey Sausage Minestrone Soup

12oz dices Italian Turkey Sausage
1 diced onion about 190g
6 cloves of garlic, minced
1- 28oz container of petite diced tomatoes (weighed 790g after pouring in)
1 can dark red kidney beans, drained (268g)
1 large zucchini (300g)
200g spinach
32oz (4 cups) low sodium chicken stock
Spices: Italian, red pepper flakes, S&P to taste
Directions
- In a large pot cook the turkey sausage
- Once cooked add your onion and garlic, cook until fragrant
- Add tomatoes, beans, zucchini, chicken stock and spices
- Let simmer 2+ hours (you can leave it alone and itll be fine, i promise)
- Taste and add extra spices if needed
- Add spinach, stir until wilted and then remove from heat
- If you are going to transfer this to another bowl weigh out how much the soup weighs! Mine ca,e out to 2150g total so instead of entering 4 servings into MFP i entered 2150 servings now i can just track how much soup i want by grams instead of separating it in 4.
- Top with Parmesan, feta, cottage cheese or any other topping you like before serving!
