Italian Turkey Sausage Minestrone Soup

The temperature in Texas has been flip flopping between the 70s and the 50s, so I guess Iโ€™ve been craving more soups in the hopes it stays cold! ๐ŸฅถMy dad makes this soup at least once a year & so I recreated it to be a bit more macro friendly with turkey sausage & minus the little elbow pasta. You can also add whatever veggies your heart desires ๐Ÿ˜ . ๐Ÿ”ธ๐— ๐—ฎ๐—ฐ๐—ฟ๐—ผ๐˜€ for 1/4 : 325 cals (30P/8F/29C) . ๐Ÿ”ธ๐—œ๐—ป๐—ด๐—ฟ๐—ฒ๐—ฑ๐—ถ๐—ฒ๐—ป๐˜๐˜€: โ€”12 oz (1 roll) of Italian Turkey Sausage โ€”1 diced onion (mine weighed 190g) โ€”6 cloves of garlic, minced โ€”1 28oz container of petite diced tomatoes (weighed 790g after pouring in) โ€”1 can dark red kidney beans, drained (measured 268g) โ€” 1 large zucchini (300g) โ€”200g spinach โ€”32oz (4 cups) low sodium chicken stock โ€” Spices: Italian spices, red pepper flakes, S&P to taste . ๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ๐—œ๐—ป๐˜€๐˜๐—ฟ๐˜‚๐—ฐ๐˜๐—ถ๐—ผ๐—ป๐˜€: 1. In a large pot, cook the turkey sausage. 2. Once cooked, add your onion & garlic & cook for a few minutes until fragrant 3. Add your tomatoes, beans, zucchini, then your chicken stock & spices. 4. Let simmer 2+ hours (you can leave it alone really, itโ€™ll be fine) 5. Taste. Add extra spices & salt here if you need. 6. Add spinach, stir in until it has just wilted, then take off the heat. 7. If youโ€™re transferring this to another bowl WEIGH OUT how much the soup weighs! Mine came out to 2150g total so instead of entering โ€œ4 servingsโ€ into the MyFitnessPal recipe, I entered 2150 servings. Now I can figure out how much soup I want by grams rather than trying to divide it 4 ways! 8.
