๐ŸŒฎ๐— ๐—œ๐—š๐—”๐—ฆ๐ŸŒฎ . This Tex-Mex dish is my go-to brunch order! Little did I know that itโ€™s also is SUCH an easy breakfast to whip up on the weekends. Iโ€™ve tossed in extra chicken for protein, but you could make it vegetarian without the chicken or use another meat! . ๐Ÿ”ธ๐— ๐—ฎ๐—ฐ๐—ฟ๐—ผ๐˜€ ๐—ณ๐—ผ๐—ฟ ๐˜๐—ต๐—ฒ ๐—ฏ๐—ผ๐˜„๐—น: 459 cals (47P/6F/44C) . ๐Ÿ”ธ๐—œ๐—ป๐—ด๐—ฟ๐—ฒ๐—ฑ๐—ถ๐—ฒ๐—ป๐˜๐˜€: โ€”3 mission extra thin corn tortillas โ€”45g bell pepper, diced (about 1/2 a bell pepper) โ€” 6oz egg whites โ€”85g chicken (not very tex-mex, but its what I had on hand & needed more protein!) โ€”15g velveeta Mexican shreds โ€”60g (2 servings) green salsa โ€”80g black beans โ€”spices (S&P, garlic, cumin, etc) . ๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ๐—œ๐—ป๐˜€๐˜๐—ฟ๐˜‚๐—ฐ๐˜๐—ถ๐—ผ๐—ป๐˜€: 1. Slice your tortillas into thin strips & toss them into a sprayed pan to crisp up. There is no such thing as TOO crisp for this recipe since theyโ€™ll soften up when you add the egg. 2. After a few minutes toss in your diced bell pepper. 3. While this is happening, spread out your beans in your serving bowl & heat them in the microwave. 4. Once those have cooked, toss in your egg whites & spices. 5. When your eggs are mostly cooked add in the salsa & cheese shreds & continue cooking just long enough for it to all blend together. 6. Serve them on top of the beans & top with more cheese/salsa if you want ๐Ÿ™‚ .
