This Tex-mex dish is my go-to brunch order! Little did i know that it was also such an EASY breakfast to whip up on the weekends, Ive tossed in extra chicken for protein but you can make it without or with another meat if you want!

3 mission extra thin corn tortilla
45g bell pepper, diced
6oz egg whites
85g chicken (not very Tex mex but i needed more protein)
15g velvets Mexican shreds
60g (2 servings) green salsa
80g black beans
Spices- S&P, garlic, cumin, etc
Directions
- Slice your tortillas into thin strips and toss into a sprayed pan to crisp up, There is no surcharge thing as TOO crisp for this recipe since they’ll soften up when you add the egg
- After a few minuted toss in the diced bell pepper
- While that cooks, spread out your black beans in your serving bowl and microwave for 1-2 minutes
- Once those have Cooke’s, toss in your egg whites and spices
- When your eggs are mostly cooked add in the salad and cheese shreds, continue cooking just long enough for it to all blend together.
- Serve them on top of the beans and top with more cheese and salsa if you want
