This is a perfect cold weather dinner meal prep! ๐Ÿฅถ I got the original recipe idea from @_littlefitone who got her recipe from @katiecrokus Mine is a bit different from both of theirs, but check theirs out if youโ€™d rather something a little different! ๐Ÿฅฐ ๐—ง๐—ฟ๐—ฎ๐—ฐ๐—ธ๐—ถ๐—ป๐—ด ๐˜๐—ถ๐—ฝ: To accurately track stuff like soups, I weigh the ENTIRE pot of soup after cooking & enter it into myfitnesspal as each gram = 1 serving. So my soup came out to 1500 grams & I entered 1500 servings. I ate it pretty evenly over 4 nights & the macros divided by 4 are as follows: . ๐Ÿงก๐— ๐—ฎ๐—ฐ๐—ฟ๐—ผ๐˜€ ๐—ณ๐—ผ๐—ฟ 1/4: 315 cals (37P/1F/36C) . ๐ŸŒถ ๐—œ๐—ป๐—ด๐—ฟ๐—ฒ๐—ฑ๐—ถ๐—ฒ๐—ป๐˜๐˜€: โ€”80 g, Red onion โ€”400 g, diced bell pepper (I purchased 2 pre-diced containers from HEB) โ€”340 g (1 bag), Frozen Cauliflower Rice โ€”1 can Black Beans โ€”1 can Rotel Tomatoes โ€”16oz 99/1 Ground Turkey โ€”2 cup, Organic Free Range Chicken Broth (mine was 10cal/cup) โ€”2 container (12 tsp ea.) low sodium Taco Seasoning Mix โ€”Lime Juice (optional garnish) . ๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ๐—œ๐—ป๐˜€๐˜๐—ฟ๐˜‚๐—ฐ๐˜๐—ถ๐—ผ๐—ป๐˜€: 1. Spray a large pot with nonstick spray, then sautรฉ your red onion for a minute 2. Add your ground turkey & cook through 3. Then add in your peppers, cauliflower rice, black beans, & rotel tomatoes & stir until incorporated 4. Add your chicken broth & ONE packet of taco seasoning 5. Let simmer for an hour or so, stirring occasionally. 6. IF itโ€™s not spicy/flavorful enough for you after an hour, add the second packet of taco seasoning. 7.
