This is the perfect cold weather dinner meal prep! 🥶
TRACKING TIP— to accurately track stuff like soups, I weigh the ENTIRE pot of soup after cooking and enter it into my fitness pal as each gram =1 serving. So my soup cam to 1500 grams and i entered 1500 servings I ate it pretty evenly over 4 nights and the macros divided by 4 are as listed below 🤗
Healthy Mexican Chili

80g Red onion
400g diced bell pepper
340g (1 bag) cauliflower rice
1 can black beans
1 can Rotel Tomatoes
16oz ground turkey
2 cup Chicken broth
2 container (12 tsp ea) low sodium taco seasoning mix
Lime juice
Directions
- Spray a large pot with non stick spray. The sauté your red onion for about 1 minute
- Add your ground turkey and cook through
- Then add your peppers, cauliflower rice, black beans and rotel tomatoes and stir until incorporated
- Add your chicken broth and one packet of taco seasoning
- Let simmer for an hour or so stirring occasionally
- IF its not spicy enough/flavorful enough after an hour add the second packet of taco seasoning
- Serve with a squeeze of lime juice and some low fat Mexican cheese !
- EASY TORTILLA CHIPS
- cut up 2-3 mission tortilla extra thin corn tortillas (20 calories each) – i built a pan out of foil, spray that then put it on top of a baking sheet for easy cleaning
- bake 5-10 minutes at 500 or until edges turn brown
- Top with salt and a squeeze of lime
