Single Serving Thai Coconut Curry

You can also sub out the Right Rice and just do cauliflower rice instead! The second time I made this I did 150g cauliflower rice on the side & mixed in a bit of turmeric and lime juice for a nice thai accent!

Ingredients

  • 1 serving Thai Curry @rightrice

  • 20g diced onion

  • 1 garlic clove, minced

  • 10-15g Thai Kitchen Red Curry Paste

  • 1/4 tsp ginger

  • 1/2 tsp turmeric

  • 30g carrots chopped/matchstick form

  • 50g bell pepper

  • 150g sliced zucchini

  • 3oz shredded chicken breast (weighed raw)

  • 100ml light coconut milk

  • 100g petite diced tomatoes

  • 2-3g stevia (to taste)

  • Salt, rep pepper flakes

Directions

  • Spray a small pot and sauté diced onion and pan for 1 to 2 minutes
  • Add garlic, curry paste, ginger and turmeric. Sauté for 2 to 3 minutes until fragrant
  • Add carrots, bell peppers and cook 1 to 2 minutes. Then add zucchini and shredded chicken, cook for 1 to 2 more minutes after that
  • Add a light coconut milk and diced tomatoes, let simmer while you prepare the rice according to the package instructions. If you are not making rice let simmer on low for about 10 minutes. Add a bit of Stevia here
  • Serve immediately and enjoy the happy dance your taste buds will have!
