Single Serving Thai Coconut Curry

Seriously, best homemade curry Iโ€™ve ever made. My nose even started running, it was the perfect amount of spice. My only regret is that itโ€™s single servingโ€”Iโ€™m already planning to make it again Saturday!โฃ โฃ I used my new @rightrice as a side. Itโ€™s a high protein, veggie based rice! If you need even lower carbs, a base of cauliflower rice would workโ€”or just eat the curry by itself!โฃ โฃ Didnโ€™t go grocery shopping before making this either. I used ingredients I already had. Donโ€™t be afraid to sub out veggies. As long as the curry base of curry paste/coconut milk/spices/onion/garlic/tomato is there, youโ€™ll have a good curry!โฃ โฃ ๐Ÿ”ธ๐— ๐—ฎ๐—ฐ๐—ฟ๐—ผ๐˜€ for the whole dish : 435 cals (33.5P/9.5F/52.1C)โฃ ๐Ÿ”ธ๐— ๐—ฎ๐—ฐ๐—ฟ๐—ผ๐˜€ for just curry : 255cals (23.5P/7.5F/22.1C)โฃ โฃ ๐Ÿ”ธ๐—œ๐—ป๐—ด๐—ฟ๐—ฒ๐—ฑ๐—ถ๐—ฒ๐—ป๐˜๐˜€:โฃ โ€”1 serving Thai curry @rightriceโฃ โ€”20g diced onionโฃ โ€”1 garlic clove, mincedโฃ โ€”10-15g Thai Kitchen Red Curry Paste (I like spice, so I did 15g) โฃ โ€”1/4 tsp gingerโฃ โ€”1/2 tsp turmericโฃ โ€”30g carrots chopped/matchstick formโฃ โ€”50g bell pepperโฃ โ€”150g sliced zucchini โฃ โ€”3 oz shredded chicken breast (weighed raw)โฃ โ€”100mL light coconut milkโฃ โ€”100g petite diced tomatoes (canned)โฃ โ€”2-3g stevia (to taste) โ€”salt, red pepper flakes to taste โฃ โฃ ๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ๐—œ๐—ป๐˜€๐˜๐—ฟ๐˜‚๐—ฐ๐˜๐—ถ๐—ผ๐—ป๐˜€:โฃ 1. Spray a small pot & saute diced onion in pan for 1-2 minutes. โฃ 2. Add garlic, curry paste, ginger, & turmeric & saute for 2-3 more minutes until fragrantโฃ 3. Add carrots, bell peppers (โ€œharderโ€ veggies) and cook 1-2 minutes, then add zucchini & shredded chicken & cook for 1-2 more minutes after thatโฃ 4. Add light coconut milk & diced tomatoes & let simmer while you prepare the @rightrice according to package instructions. If you are not making rice, let simmer on low for ~10 minutesโฃ. Add a bit of stevia here! 5. Serve immediately & enjoy the happy dance your taste buds will have. โฃ โฃ ๐—ฆ๐˜‚๐—ฏ๐˜€๐˜๐—ถ๐˜๐˜‚๐˜๐—ถ๐—ผ๐—ป ๐—œ๐—ฑ๐—ฒ๐—ฎ๐˜€:โฃ โ€”no zucchini? Add some broccoli, cauliflower, or squash.โฃ โ€”no carrots or bell pepper? Leave โ€˜em out!โฃ โ€”no chicken? Use ground turkey or shrimp!

You can also sub out the Right Rice and just do cauliflower rice instead! The second time I made this I did 150g cauliflower rice on the side & mixed in a bit of turmeric and lime juice for a nice thai accent!
