Mexican Bell Pepper & Chicken Single Serving Casserole

Iโ€™m learning that casseroles are very forgiving dishes, which is perfect for right now when you might not be able to find everything in stores. I added egg whites and cottage cheese to this dish just for the heck of it, & it still turned out well! โฃ โฃ Non-negotiable is the low fat cream of chicken soup! Itโ€™s an amazing way to add tons of flavor and creaminess to a dish without adding a ton of fat. โฃ โฃ I used @miraclenoodle rice as a volume hack here. The whole bag of shirataki rice is only 25 calories. You can get it online, on amazon, or sub out extra cauliflower rice. โฃ โฃ ๐Ÿ”ธ๐— ๐—ฎ๐—ฐ๐—ฟ๐—ผ๐˜€ ๐—ณ๐—ผ๐—ฟ ๐˜๐—ต๐—ฒ ๐˜„๐—ต๐—ผ๐—น๐—ฒ ๐—ฑ๐—ถ๐˜€๐—ต: 381 cals (35.8P/7.5F/41C)โฃ โฃ ๐Ÿ”ธ๐—œ๐—ป๐—ด๐—ฟ๐—ฒ๐—ฑ๐—ถ๐—ฒ๐—ป๐˜๐˜€:โฃ โ€”100g diced bell pepperโฃ โ€”1 container @miraclenoodle miracle riceโฃ โ€”100g frozen riced cauliflower โฃ โ€”3 oz shredded chicken breast (weighed raw)โฃ โ€”125g (1/2 cup) low fat cream of chicken soupโฃ โ€”20g spinachโฃ โ€”5g taco seasoningโฃ โ€” 125g (1/2 cup) original rotel tomatoes & green chilesโฃ โ€”34g (1/4 cup) diced, pickled jalapeno peppers (1 serving = 1 carb!)โฃ โ€”30g Mexican Velveeta shredsโฃ โ€”40g fat free cottage cheeseโฃ โ€”30g egg whitesโฃ โฃ ๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ๐—œ๐—ป๐˜€๐˜๐—ฟ๐˜‚๐—ฐ๐˜๐—ถ๐—ผ๐—ป๐˜€:โฃ 1. Preheat oven to 400 degreesโฃ 2. Sautรฉ your bell pepper in a small pan & microwave your cauliflower rice in a large bowl until warm. โฃ 3. Toss your bell pepper into the bowl with the cauliflower rice & then use the pan to dry out your @miraclenoodle rice after draining & rinsing itโฃ 4. While cooking, combine the other ingredients in the same bowl as the cauliflower rice/bell pepper EXCEPT for the cheese/spinachโฃ 5. Add extra spices here if you want. I added cumin & salt. โฃ 6. After a few minutes of sautรฉing, add the miracle rice in with the other ingredients, then add your spinach. The other ingredients should be just warm enough to start wilting the spinach, if not, microwave it for a few seconds until wiltingโฃ 7. Finally stir in SOME of the cheese & place in a sprayed baking dish. Top with remaining cheeseโฃ 8. Bake for 15 minutes ๐Ÿ™‚

UPDATE: I ran out of miracle rice one week & so I made this with 200g riced cauliflower & I liked it even more!
