Mexican Bell Pepper & Chicken Single Serving Casserole

Here’s another single serving casserole recipe for you! I’m learning that casseroles are very forgiving – which is perfect for right now when you might not be able to find everything in stores. I added egg whites and cottage cheese to this dish just for the heck of it it still turned out well. Nonnegotiable is a low-fat cream of chicken soup! It’s an amazing way to add tons of flavor and creaminess to a dish without adding a ton of fat.

Ingredients

  • 100g diced bell pepper

  • 1 container @miraclenoodle miracle rice

  • 100g frozen riced cauliflower

  • 3oz shredded chicken breast (weighed raw)

  • 125g low fat cream of chicken soup

  • 20g spinach

  • 5g taco seasoning

  • 125g rotel tomatoes and green chilies

  • 34g diced pickled jalapeños

  • 30g Mexican velveeta shreds

  • 40g fat free cottage cheese

  • 30g egg whites

Directions

  • Preheat oven to 400°
  • Tell your bell pepper in a small pan and microwave your cauliflower rice and a large bowl until warm
  • Toss your bell pepper into the bowl with the cauliflower rice and then use the pan to dry out your miracle noodle rice after draining and rinsing it
  • Well cooking combine the other ingredients in the same bowl as a cauliflower rice and bell pepper except for the cheese and spinach
  • Add extra spices here if you want. I added cumin and salt
  • After a few minutes of sautéing add the miracle rice in with the other ingredients then add your spinach. The other ingredients should be just warm enough to start wilting the spinach if not microwave it for a few seconds until wilting
  • Finally start in some of the cheese and place and I sprayed a baking dish top with remaining cheese
  • Bake for 15 minutes

UPDATE: I ran out of miracle rice one week & so I made this with 200g riced cauliflower & I liked it even more!
