Creamy Chicken & Mushroom “Pasta” Casserole

Inspo for this recipe came from @laurenfitfoodie who has a meal prep casserole that inspired me to add shirataki noodles to this! This is a ๐’”๐’Š๐’๐’ˆ๐’๐’† ๐’”๐’†๐’“๐’—๐’Š๐’๐’ˆ recipe.โฃ โฃ ๐Ÿ”ธ๐— ๐—ฎ๐—ฐ๐—ฟ๐—ผ๐˜€ ๐—ณ๐—ผ๐—ฟ ๐˜๐—ต๐—ฒ ๐˜„๐—ต๐—ผ๐—น๐—ฒ ๐—ฑ๐—ถ๐˜€๐—ต : 370 cals (40.8P/8.8F/39.9C)โฃ โฃ ๐Ÿ”ธ๐—œ๐—ป๐—ด๐—ฟ๐—ฒ๐—ฑ๐—ถ๐—ฒ๐—ป๐˜๐˜€:โฃ โ€”200g cooked spaghetti squashโฃ โ€”1 container @miraclenoodle Angel Hair shirataki noodles (can be purchased online/Amazon)โฃ โ€”3 oz shredded chicken breast (weighed raw)โฃ โ€”.5 cup (1 serving) low fat cream of mushroom soupโฃ โ€”20g spinachโฃ โ€”3oz mushroomsโฃ โ€”20g low fat mozzarella cheeseโฃ โ€”60g fat free cream cheeseโฃ โ€”2oz fat free milk โฃ โฃ ๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ๐—œ๐—ป๐˜€๐˜๐—ฟ๐˜‚๐—ฐ๐˜๐—ถ๐—ผ๐—ป๐˜€:โฃ 1. Preheat oven to 400 degreesโฃ 3. Prep your shirataki noodles by rinsing them well, then sauteing them in a hot pan for 2-3 minutes. โฃ 4. Sautรฉ your mushrooms in a separate panโฃ 5. In a large bowl, place your fat free cream cheese & microwave until it is a spreadable consistency โฃ 6. Combine the rest of the ingredients in the bowl one at a time, saving the spinach and cheese. โฃ 7. You might need to microwave the bowl again to get the contents warm enough to slightly wilt the spinach as you stir them in. โฃ 8. Finally stir in the cheese & place in a sprayed baking dish. โฃ 9. Bake for 15 minutes ๐Ÿ™‚ โฃ 10. Top with extra cheese if your macros allow & let cool for a few minutes so you donโ€™t burn your tongue!โฃ โฃ *in the picture I also added one serving of artichokeโ€ฆ but the amount was so pathetic I left it out of the recipe because it didnโ€™t really add anything to the dish. โฃ โฃ ๐—ฆ๐˜‚๐—ฏ๐˜€๐˜๐—ถ๐˜๐˜‚๐˜๐—ถ๐—ผ๐—ป ๐—ถ๐—ฑ๐—ฒ๐—ฎ๐˜€: โฃ โ€”canโ€™t find milk? Add some greek yogurt. โฃ โ€”canโ€™t find a specific cheese? Sub out with a different cheese! โฃ โ€”canโ€™t find chicken? Use any kind of protein you can find, or leave it out and serve this as a side dish! โฃ
