Smoked Salmon “Buddha” Bowls

Looking to add more micronutrients to your day but not willing to sacrifice flavor?

Enter the BOWL MEAL.

I think of them like those pretty “Buddha Bowls” you see on pinterest, but those are all vegan I think so I’m not sure if Buddha would approve of this one.

Micronutrients GALORE here. We’ve got Omega 3s in the smoked salmon (I take an omega 3 supplement, but it’s still important to actually eat fish protein too!) fiber & vitamin D in the mushrooms, potassium & satiating carbs in the potatoes, & vitamin K & C in the Brussels Sprouts! (and more, but I’m not gonna list them ALL out)

This is very meal prep friendly too!

Just prep your potatoes, mushrooms, Brussels Sprouts/spinach & store them separately, then reheat & toss in a container with the cold smoked salmon on top.

Hate smoked salmon? Replace the salmon with chicken & toss some Sugar Free BBQ sauce on top!

Iโ€™ve had this meal so many times over the last month & have just never shared it because of how โ€œbasicโ€ it looked ๐Ÿ˜…โฃ โฃ But itโ€™s yummy & nutritious AF & most importantly EASY. โฃ โฃ I know it might APPEAR from my stories and Instagram feed that I eat nothing but extravagant, crazy food, (because thatโ€™s fun to share LOL) but tbh this bowl was so delicious and satisfying, especially with the air fried potatoes ๐Ÿ˜‚๐Ÿค— โฃ โฃ Did you know that potatoes are one of the most satiating foods? So you SHOULD be eating potatoes especially if youโ€™re dieting and need help with hunger signals! ๐Ÿฅ” โฃ โฃ Please note that the ingredient amounts are (and should be) fully customizable to YOUR nutritional needs. Need more protein? Double the salmon. Need more carbs? Add more potato. Need fat? Sautรฉe the shaved Brussels sprouts (or spinach), covering it with a lid for a few minutes. Add balsamic & a touch of pancake syrup the last few minutes of cooking โฃ 3. Sautรฉe your mushrooms separately. โฃ 4. Then assemble your bowl with the smoked salmon on top!โฃ โฃ You could even prep all of these elements separately and eat them throughout the week! โฃ
