Korean Bulgogi Cauliflower Rice Bowl

This is a lower carb, single serving version of my FAVORITE MEAL PREP EVER.

It’s super simple, fast to whip up, & really only requires you to cook one thing since everything else is done in the microwave.

I tend to make the meat in bulk that way I can have it several times in one week.

If you have more carbs in your macros, replace the cauliflower rice with real rice or do half & half.

I also really love adding a fried egg on top if I need more fat in my macros for the day!

Itโ€™s basically a bro meal upgrade ๐Ÿ˜‰๐Ÿ’๐Ÿผโ€โ™€๏ธโฃ โฃ I also love topping it with a fried egg ๐Ÿณ if I have the fat macros left!โฃ โฃ โœจA meal prep version with real rice is available on my blog!โœจโฃ โฃ ๐Ÿ”ธ๐— ๐—ฎ๐—ฐ๐—ฟ๐—ผ๐˜€: 264 cals (31.2P/4.5F/25.2C)โฃ โฃ ๐Ÿ”ธ๐—œ๐—ป๐—ด๐—ฟ๐—ฒ๐—ฑ๐—ถ๐—ฒ๐—ป๐˜๐˜€ :โฃ โ€”4oz 96/4 ground beef, measured rawโฃ โ€”1 tbsp (20g) Korean BBQ Bulgogi Marinade (I use Chung Jung One brand from the grocery) โฃ โ€”200g frozen cauliflower riceโฃ โ€”85g frozen broccoliโฃ โ€”40g matchstick carrotsโฃ โ€”5g+ sriracha โฃ โ€”everything but the bagel seasoningโฃ โ€”5-10g rice vinegar โฃ โ€”salt/garlic powderโฃ โฃ ๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ๐—œ๐—ป๐˜€๐˜๐—ฟ๐˜‚๐—ฐ๐˜๐—ถ๐—ผ๐—ป๐˜€:โฃ 1. The night before or several hours before, marinate the ground beef with the bulgogi marinade. I usually marinate a double batch or a full pound & eat the rest during the week. โฃ 2. After marinating, cook the marinated ground beef in a pan.โฃ 3. Place the frozen cauliflower rice in a large bowl & microwave for ~3 minutes until hot. โฃ 4. Season the cauliflower rice with everything but the bagel seasoning, salt/garlic powder, & Rice vinegar (trust me!) โฃ 5. Microwave the frozen broccoli 1-2 minutes until hotโฃ 6. You can eat the matchstick carrots raw, or microwave them 30-60 seconds too to cook them slightlyโฃ 7. Place all the components on top of the seasoned cauliflower rice, drizzle with sriracha & more EBTB seasoningโฃ 8. ENJOY ๐Ÿคฉโฃ
