If lavender isnโt your thing, leave them out and youโve still got some delicious lemon cookies ๐คฉโฃ โฃ Recipe makes 12 cookiesโฃ โฃ ๐ธ๐ ๐ฎ๐ฐ๐ฟ๐ผ๐ ๐ฝ๐ฒ๐ฟ ๐ฐ๐ผ๐ผ๐ธ๐ถ๐ฒ: 70 cals (5.2P/2F/7.5C)โฃ โฃ ๐ธ๐๐ป๐ด๐ฟ๐ฒ๐ฑ๐ถ๐ฒ๐ป๐๐:โฃ โ80g all purpose flourโฃ โ40g @pescience vanilla protein (I always use a whey/casein blend when baking) โฃ โStevia if you need (I forgot and they were still sweet)โฃ โ1/2 tsp baking powder โฃ โpinch of salt โฃ โ lemon zest from 1 lemon (mine measured to be 3g)โฃ โ1 tsp dried lavender flowersโฃ โ124g (1/2 cup) low fat ricotta โฃ โ60g egg whitesโฃ โ10g coconut oil (in liquid form, so melt it if you need to)โฃ โlemon juice from 1 lemon (I measured it to be 30mL)โฃ โ28g white chocolate chipsโฃ โฃ ๐ฉ๐ผโ๐ณ๐๐ป๐๐๐ฟ๐๐ฐ๐๐ถ๐ผ๐ป๐:โฃ 1. Preheat oven to 350 & line a baking sheet with parchment paperโฃ 2. Grind your lavender. I used a coffee grinder to turn it into a fine powderโฃ 3. Zest your lemon.โฃ 4. Mix your dry ingredients together in one bowl & then mix your wet in another bowl. Then combine. โฃ 5. Add your white chocolate chips here. โฃ 6. Measure out into 12 even dollops on the baking sheet & bake for 10-12 minutes. โฃ ๐ฃ๐ฟ๐ผ-๐๐ถ๐ฝ: Weigh your bowl BEFORE adding the ingredients & then weigh it after so you know how much the batter weighs.
