Spring is here, and lavender is one of my favorite flavors you can buy dried lavender flowers at grocery stores in health food/bulk section. Doubt anyone’s buying them right now either! I ground them up with a coffee grinder to make them into a powder to use in the cookies. If lavender isn’t your thing leave them out and you will have a delicious lemon cookie.
White Chocolate Lemon Lavender Protein Cookies

80g all purpose flour
40g @pescience vanilla protein
Stevia if you need
1/2 tsp baking powder
Pinch of salt
Zest from 1 lemon, you will also want the juice of 1 lemon
1 tsp dried lavender flowers
1/2 cup low fat ricotta
60g egg whites
10g coconut oil (in liquid form)
28g white chocolate chips
Directions
- Preheat oven to 350°. Line a baking sheet with parchment paper
- Grind your lavender. Are use a coffee grinder to turn it into a fine powder
- Zest your lemon
- Make sure dry ingredients together in one bowl and then your wet in another bowl then combine
- Add your white chocolate chips here
- Measure out into 12 even dollops on the baking sheet and bake for 10 to 12 minutes
- Pro tip where your bowl before adding the ingredients and then wait after so you know how much the batter ways. So if it weighed 360 g then you would know to measure out 30 g of dough per cookie to make them all even
