Blueberry Lemon Protein Banana Bread

BOY did this smell AMAZING while baking! It’s crazy how a little lemon zest can make flavors explode!

These mini banana bread loads are my favorite things to make since I like being able to eat the whole thing rather than just a tiny slice!!

Ingredients

  • 1/2 large banana (60g)

  • 20g Blueberry Muffin Almond butter from @aofficial_allamericanbutter

  • 1tsp vanilla extract

  • 1tbsp (7g)coconut flour

  • 10g @pescience Cake Pop protein powder

  • 5g cake flour

  • 2g baking powder

  • 3g lemon zest

  • Squeeze of lemon juice

  • 15-20g frozen blueberries

Directions

  • Preheat oven 350
  • Mash your banana and zest the lemon
  • Add wet ingredients, then your dry, mix together
  • Put into a sprayed, mini loaf pan
  • Bake 20-25 minuted until inserted toothpick comes out clean!
