Peach Cobbler Protein Muffins

My family went to the peach truck the other day and brought home 25 POUNDS worth of peaches.

As soon as they were ripe my mom started baking up a STORM, trying to use all the peaches ASAP before they went bad.

Not to be outdone, I had to whip up my own peach filled dessert & holy YUM are these good! The peaches give the muffins so much moisture & they come out to only 67 calories each with over 5 grams of protein!

Volume food win โค๏ธ๐Ÿ™Œ๐Ÿป โฃ โฃ The recipe makes 8 muffins. Feel free to double it if you want more. โฃ โฃ ๐Ÿ‘๐— ๐—ฎ๐—ฐ๐—ฟ๐—ผ๐˜€ ๐—ฝ๐—ฒ๐—ฟ ๐—บ๐˜‚๐—ณ๐—ณ๐—ถ๐—ป: 67 cals (5.8P/1F/9C) โฃ โฃ ๐Ÿ‘๐—œ๐—ป๐—ด๐—ฟ๐—ฒ๐—ฑ๐—ถ๐—ฒ๐—ป๐˜๐˜€ :โฃ โ€”225g (1 cup, about 2 whole) peaches, peeled & diced. I used fresh, but canned would work too!โฃ โ€”30g Cake Flourโฃ โ€”10g Coconut Flourโฃ โ€”32g (1 scoop) @pescience cake pop protein powder (vanilla or snickerdoodle would work too! The important thing is that your protein is a whey/casein blend. If itโ€™s a pure whey, your muffins will end up tough & dry)โฃ โ€”2g baking soda โ€”2g baking powderโฃ โ€”1/2 tsp+ cinnamon โ€”pinch of salt (donโ€™t skip this) (1/8 tsp)โฃ โ€”stevia to taste (I did 7g)โฃ โ€”90g non-fat greek yogurtโฃ โ€”90g unsweetened applesauce โ€”1 whole egg (donโ€™t skip, because baked goods do need SOME fat to taste good) โฃ โฃ ๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ๐—œ๐—ป๐˜€๐˜๐—ฟ๐˜‚๐—ฐ๐˜๐—ถ๐—ผ๐—ป๐˜€:โฃ 1. Pre-heat the oven to 400โฃ 2. One bowl method: combine your wet ingredients, then your dry, THEN gently fold in the peaches last โฃ 3. Divide among 8 prepared/sprayed muffin pan spots. I place a cut out circle of parchment at the bottom of each & spray with coconut oil. โฃ 4. Bake for 20-25 minutes. I pulled mine out around 22 minutes & will probably do slightly less next time. โฃ 5. ENJOY & keep in the fridge because these muffs are SUPER moist
