White Chocolate Lemon Protein Cookies

As soon ad @laurenfitfoods posted her raspberry muffin made with ricotta cheese i knew i had the missing piece to make a moist fluffy lemon protein cookie! 🤩 And WOW these do NOT disappoint! They passed the mom and dad test and not they are all gone in 2 days!! This recipe makes 6 cookies but TBH i need to double it next time cause they FLEW!!

Ingredients

  • 40g all purpose flour

  • 20g vanilla protein powder

  • Stevia to taste i do 3-4g

  • 1/2 tsp baking powder

  • Pinch of salt

  • Zest of 1 lemon about 3g

  • 1/4 cup low fat ricotta

  • 30g egg whites

  • 5g coconut oil- melt if needed

  • 1/2 the juice from 1 lemon- 20ml

  • 14g white chocolate chips

Directions

  • Preheat oven to 350 and line a baking sheet with parchment paper
  • Zest your lemon
  • Mix your dry ingredients together and wet ingredients together in separate bowls. Then mix dry into wet
  • Add white chocolate chips
  • Measure out 6 even drops on the baking sheet and bake for 10-12 minutes

Notes

  • PRO TIP- weigh your bowl BEFORE adding the ingredients and then weigh it after so you know how much the batter weighs. IE if it weighed 240g then you would know to measure out 40g of dough per cookie to get them all even.
