White Chocolate Lemon Protein Cookies

As soon as @laurenfitfoodie posted her raspberry muffins made with ricotta cheese, I KNEW I had the missing piece to making a moist, fluffy lemon protein cookie. ๐ŸคฉAnd WOW these do NOT disappoint. They passed the mom AND the dad test (the latter hates all of my protein/stevia sweetened stuff USUALLY) and now theyโ€™re all gone 2 days later. This recipe makes 6 cookies, but tbh I need to double it next time cause they FLEW. . ๐Ÿ”ธ๐— ๐—ฎ๐—ฐ๐—ฟ๐—ผ๐˜€: 70 cals (5.2P/2F/7.5C) . ๐Ÿ”ธ๐—œ๐—ป๐—ด๐—ฟ๐—ฒ๐—ฑ๐—ถ๐—ฒ๐—ป๐˜๐˜€: โ€”40g all purpose flour โ€”20g vanilla protein (I always use a whey/casein blend when baking) โ€”Stevia (to taste, I do 3-4g) โ€”1/2 tsp baking powder โ€”pinch of salt โ€” lemon zest from 1 lemon (mine measured to be 3g) โ€”1/4 cup low fat ricotta โ€”30g egg whites โ€”5g coconut oil (in liquid form, so melt it if you need to) โ€”lemon juice from 1/2 lemon (I measured it to be 20mL) โ€”14g white chocolate chips . ๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ๐—œ๐—ป๐˜€๐˜๐—ฟ๐˜‚๐—ฐ๐˜๐—ถ๐—ผ๐—ป๐˜€: 1. Preheat oven to 350 & line a baking sheet with parchment paper 2. Zest your lemon. 3. Mix your dry ingredients together in one bowl & then mix your wet in another bowl. Then combine. 4. Add your white chocolate chips here. 5. Measure out into 6 even dollops on the baking sheet & bake for 10-12 minutes. . ๐—ฃ๐—ฟ๐—ผ-๐˜๐—ถ๐—ฝ: Weigh your bowl BEFORE adding the ingredients & then weigh it after so you know how much the batter weights.
